chocolate chip cookie ice cream sandwich



These cookies are my Achilles heel. When they are in the house, I can't stop eating them until they are gone (whether they are baked yet or not)! It doesn't help that they are about 5 inches in diameter and the perfect level of soft and chewy. Nom Nom Nom. Then I got the bright idea, as it has been heating up, to make them into ice cream sandwiches. I mean... YUM.

Before I drool enough for it to stain this internet page (har har!) I should just tell you where to find this recipe. You see... I can't take any credit. I wish I could, but I can't. I can't even say it needed tweaking, because it didn't. Follow the instructions laid out and you will be in chocolate cookie heaven. I can however claim that I came up with the idea to make them into ice cream sandwiches. I mean, why wouldn't you. Those Mrs. Fields chocolate cookie ice cream sandwiches from 7-11 are amazing but homemade is (almost) always better.

CAN YOU BELIEVE YOU HAVE TO WAIT 36 HOURS?! Now you know why they get eaten before they get cooked. But seriously, you have to wait that long at least once. It's magic. But 4-12 hours is a nice sweet spot when you are in a hurry or just HUNGRY.

Lastly, we have to turn these bad boys into ice cream sandwiches.

Chocolate Chip Cookie Ice Cream Sandwiches


2 baked and cooled chocolate chip cookes

Ice Cream of your choice (I used Vanilla Bean)

2 pieces of Parchment Paper


Put two normal size scoops of ice cream on one piece of parchment paper. Put your second piece on top and flatten, trying to keep it around 1/2-1 inch thick. Use a knife to trim any crazy edges beyond the size of your cookie. After removing one piece of parchment, replace with cookie directly on ice cream slice. Flip over and remove second piece of parchment and replace with second cookie. 

Put back in the freezer for 10 minutes and ENJOY!!!

Now don't come back and complain about how many of these you've eaten. I promise I've eaten more. I will instead invite you to come over and we can eat them together!
